German Potato
Salad
You can't go wrong with
this recipe, its either good or great! |
|
8-10 medium potatoes
1 lb. bacon
1 med. onion
1/2 C. miracle whip
1/4 C. sugar
1/2 doz. eggs
2 capfuls white vinegar
Cube cooked
potatoes, set aside, fry bacon & add to potatoes, RETAIN grease. Hard
boil eggs, chop & add to potatoes. Sauté onions in bacon grease, add
miracle whip, sugar & vinegar, cook until clear, add to potatoes, mix
well and serve.
If you like a sweeter salad increase sugar. Either way, you'll love it!

Broccoli-Cauliflower Salad |
|
1 cup broccoli florets
1 cup cauliflower florets
2 cups hard-cooked eggs,
diced (optional)
1 cup shredded Cheddar cheese6 slices bacon
1 cup mayonnaise
1/2 cup white sugar
2 tablespoons white wine vinegar
Directions
1 Place bacon in a large, deep skillet. Cook over medium
high heat until evenly brown. Crumble and set aside.
2 In a medium sized salad bowl, layer in order the
broccoli, cauliflower, eggs, cheese and bacon.
3 Prepare the dressing by whisking together the
mayonnaise, sugar and vinegar. Drizzle dressing over top and serve.

Seven Layer Salad
|
|
1 pound bacon
1 large head iceberg lettuce-
rinsed, dried and chopped
1 red onion, chopped
1 (10 ounce) package frozen
green peas, thawed
10 ounces shredded Cheddar cheese
1 cup chopped cauliflower
1 1/4 cups mayonnaise
2 tablespoons white sugar
2/3 cup grated Parmesan cheese
Directions
1 Place bacon in a large, deep skillet. Cook over medium
high heat until evenly brown. Crumble and set aside.
2 In a large flat bowl, place the chopped lettuce and top
with a layer of onion, peas, shredded cheese, cauliflower
and bacon.
3 Prepare the dressing by whisking together the
mayonnaise, sugar and Parmesan cheese. Drizzle over salad and
refrigerate until chilled.

1 bag of Spinach (cleaned well)
2 cups of fresh strawberries sliced
1 small can of mandarin oranges (drained)
1/4 cup of slivered almonds
1/4 cup of chopped or ringed red onion
3 slices of bacon fried crisp and broken up into small pieces
Mix all of the above together well then put the dressing on just before
serving
Dressing:
1/3 cup of cooking oil
3 tablespoons of vinegar
1/3 cup of sugar
1 teaspoon ground mustard
1/2 teaspoon of paprika
Blend well and pour over the salad greens
This is an excellent salad but needs to be eaten same day as made. I
have
substituted lettuce instead of spinach is good either way.
