CHICKEN WINGS


30 - 40 Chicken wings
1 C. soy sauce
1 (32oz.) jar apricot jam*
6 T. sugar
5 T. lemon juice
2 1/2 t. ginger
1 1/4 t. each cinnamon and nutmeg
3/4 t. allspice
1 1/8 t. garlic salt

Disjoint wings, discarding tips. Rinse; pat dry.
combine soy sauce, jam, sugar, lemon juice, ginger, cinnamon, nutmeg, allspice, thyme and garlic salt in bowl; mix well.
Arrange chicken wings in 9x12 inch baking pan.  Brush with sauce.
Bake 350 degrees for 2 hours or until tender, basting frequently with sauce.
Serve hot or cold. 
*May substitute peach or pineapple jam for apricot jam.

 

Linda's Deer Sausage

 
2 lbs. deer burger
2T. Tender Quick
1/4 tsp. garlic powder
1/8 tsp. onion powder
1 1/2 T. liquid smoke
1 C. water
2 T. crushed peppercorn

Refrigerate 24 hours in logs wrapped in foil.  Bake 350 for 1 hour, turn bake an additional 30 minutes.


 

Beef Stuffed Peppers


3 large green peppers  cut in half - length wise
1 lb. ground beef
1 C. quick cooking oats
1 egg  slightly beaten
1 small onion chopped fine
1  8oz. can tomato sauce
1 T. Worcestershire sauce
1 t. salt
1/3 C. water - add to pan  NOT upper ingredients

Place peppers in a 12x7 glass baking dish set aside mixed ingredients in medium bowl.  Mix well.  Put meat mixture in peppers, pour the water in bottom of dish, cover with plastic wrap. Microwave on "roast"(or high) for 22 to 24 minutes.  Let stand covered 5 minutes.  Top with catsup or chili sauce.

Steak & Parmesan-Grilled Vegetables

     
2 t-bone or porterhouse steak -- 1" thick
1/4  cup Parmesan cheese -- grated
2  tablespoons olive oil
2  tablespoons  red wine vinegar
2  red or yellow bell peppers -- quartered
1  large red onion cut crosswise into 1/2" slices
1  tablespoon garlic -- crushed
2  teaspoons basil leaves -- dried
1  teaspoon pepper 

Make sure your steaks are well trimmed of fat.
1. In a small bowl, combine seasoning ingredients; mix well. Reserve 4 teaspoons seasoning; press into both sides of beef steaks.
2. Add cheese, oil and vinegar to remaining seasoning, mixing well; set aside.
3. Place steaks in center of grid over medium ash-covered coals; arrange vegetables around steaks. Grill steaks uncovered 14 to 16 minutes for medium rare to medium doneness, turning occasionally. Grill peppers 12 to 15 minutes and onion 15 to 20 minutes or until tender, turning once. Brush vegetables with reserved cheese mixture during last 10 minutes of grilling.
