Black Bean Salsa
( 6 servings)


1 can (26.5oz) Black Beans, rinsed and drained
1 cup corn, ( canned or frozen) thawed and drained
3 cans diced tomatoes (jalapeno or green chile flavored)
1 cup Italian Dressing
1/2 cup chopped onion
Chopped jalapeno to taste
Tortilla Chips

Drain tomatoes, and chop coarsely if desired. Mix all ingredients together and marinate in refrigerator for at least 1 1/2 hours. Serve with tortilla chips (lime flavored are the best!)

Hot Spinach & Artichoke Dip
 

1 small pkg of chopped frozen spinach (drain moisture)
1 small can of artichoke(chopped)
1 clove of minced garlic
1 cup of mayonnaise
2 cups of Italian shredded cheese
 
Mix all ingredients together in a baking dish and bake in a 350 degree oven for 20 minutes....or until bubbly. 
Serve warm and dip with your choice of cracker or tortilla chip.

BBQ Meatballs
 
1/2 C. Can milk
1 1/2 lbs. Hamburger
1 C. Quick oat meal
1 Egg
1/2 C. Chopped onion
1/4 tsp. Garlic powder
     Mix all together and shape into balls
 
1 C. Catsup
3/4 C. Brown sugar
1 tsp. Liquid smoke
1/4 tsp. Garlic powder
1/4 C. Onion
    Stir together and pour over meatballs
        Bake 1 hour in 350 degree oven

Creamy Cheese Sourdough Dip
 

1 Round loaf of sourdough bread- or bread of choice
Cut out the middle of bread making a bowl. Break the pieces of bread in to bites and place around the outside of bread bowl. (These pieces of bread are used to dip the cheese mixture.)
1 &1/2  cups (12 oz) sour cream
2 (3oz) pkgs. cream cheese
1/2 cup chopped green onion
Heat these ingredients together in sauce pan on low heat.
Add: 2 cups (8oz) shredded sharp cheese
1 & 1/2 cups of cooked cubed ham
 

Heat this all together until melted, on low heat.  Pour cheese mixture into prepared bread bowl and serve warm, using the bread bites to dip the cheese mixture.

Shrimp Mold

1 can tomato soup
1/2 cup cold water
1 1/2 packages Knox gelatin
1 8 ox. package Philly cream cheese
2 small cans shrimp
1 cup mayo
3/4 cup chopped celery
3/4 cup chopped onion.

Heat  soup and cheese over low flame.
Mix water & gelatin until dissolved
When soup & cheese well blended, mix in everything else and put in
a mold or bowl lightly sprayed with pam.
Chill 4-5 hours.  Serve with crackers

Sounds Good

1 lb. tube hot sausage
8 oz. pepper jack cheese shredded
1 (4oz) jar jalapenos chopped
1 (1o) count can flaky biscuits
 
 Crumble and cook sausage thoroughly
 Drain excess grease.
 In large bowl combine sausage, cheese and jalapenos.
 Separate biscuits into 20 pieces. Pull to make squares about 3"x3"
 Put sausage mixture in the square and pinch together like a dumpling
 Place on cookie sheet and bake according to biscuit directions.
 
Serve with dip:
 8 ounces sour cream
 1 pkg. taco seasoning.
 mix together and have fun dipping.
